You could add the pak choi into the mash for a sort of Irish-Asian fusion champ type affair. I'd be tempted to marinade the pork chops in something asian (dark soy and mirin would be nice, or maybe dusted with toasted szechuan pepper corn and flour) and then do them on a griddle pan. Then stir fry the pak choi with some sesame seeds, drizzle with sesame oil and then serve the pork chops on top. Or bake the celeriac in a cheese sauce (with bread crumbs on the top) and serve the Pork Chops with that plain.
