I'm fond of Daniel Leader and Judith Blahnik's _Bread Alone_.  That's
also the name of a bakery (plus a handful of cafes) in upstate NY
state started (led?) by Leader (who is a baking instructor at (and
graduate of) the Culinary Institute of America).  Apparently, he's got
a new books coming out later this year.
