Get an appropriate sharpening stone for your knife.. I use an oilstone, from B&Q, cost about a fiver. And I have one of those metal poker-shaped steels for taking the burr off the edge or casual polishing of the blade. Lots of people seem to like whetstones and waterstones as being a bit easier to work with. Technique is everything with stone sharpening... /joel
