Sorry about the delay people - the DNS for thegestalt got, umm, broken 
for several weeks and then I had to migrate the list to Siesta - if you

Mrs Bassa's Tandoori Chicken 


This, to be honest, is straight off the back of the pot of Tandoori 
paste I bought from the incomparable Mrs Bassa at Borough Market. If you 
haven't already tried her Brinjal Pickle then you really should - it's 
fantastic and quite unlike the offering from Pataks et al ...

I got 4 good quality chicken breates, scored them and then stuck them 
in a bowl with the juice of a lemon and some salt. Then I mixed about a 
cup (half a large pot) of yoghurt with two generous table spoons of 
Tandoori paste. I left for about half an hour but over night might have 
been better.

I preheated an oven to 200 degrees C and then laid them breasts out on 
an oven tray and bake them for 40 minutes.

To be honest, they came out a little dry and one side was blacker (more 
caramelised ;) than the other although that's partly because I forgot to 
turn them. If I was to do them again I'd do them at a lower heat and 
maybe for a shorter time. 

Served with Sainsbury's three colour rice (nice, if a little greasy), 
Patak's Garlic and Coriander Naan (nice if a little dry), 
Sainsbury's Mixed Indian starters (not worth it) and Sainsbury's 
Vegetable Dansak (lovely). 

I also mixed some of the yoghurt with a couple of tsp of ordinary 
put-it-on-lamb mint sauce to see what happened and was pleasantly 
surprised by the results.

As an aside, I've had Sainsbury's ready-meal Indians before and always 
found them excellent - especially the bombay potatos, butter chicken and 
in particular the Goan Fish Curry.

I've heard bad things about their Chinese range though.
