Seeing as everyone else is doing recipes today, here's one I did recently, when needing to whip together a quick dinner, although I used legs instead, which I think were a bit tough, so breast would be best... Mashed potatoes: starchy potatoes, boiled with plenty of salt, rinsed, and mashed in a moulin. Plenty of butter, a splosh of milk, and a dribble of truffle oil. Beans: French beans, boiled in very salty water very quickly, and then lightly sauteed in butter. Duck: Take a breast, sit on a couple of slices of ripe pear and some thinly-sliced ginger on a baking tray. Salt generously, so's the skin crisps up, and roast at 180 for 20 minutes-ish. Sauce: reduce equal portions of red wine and cheap balsamic vinegar until thick and sweet Then arrange prettily on a plate. with swirls of sauce on the plate and fans of pommes gaufrettes in the mash. Eat with enthusiasm and scant regard for spilling sauce on your shirt. Tom.
