Ok, so someone says 'boiled' chicken and you start thinking
back to dodgy school dinners and bland dry meat, but
I was shown this over the weekend and it's fab!

Rough quantities for 2 people
-----------------------------
2 medium chicken breasts per person
2 carrots
2 leeks
1 brockoly (sp!)
3 veg stock cubes
3 chicken stock cubes
Some Paprika

Chop carrots in half and then in quarters length ways,
cover bottom of sauce pan.

Place chicken on carrots - add water (cold) until chicken
just covered.

Crumble in 3 veg and 2 chicken stock cubes and some
paprika,

Bring to boil, cover and simmer for 15 to 20 mins.

Chop leeks and add for about 5 mins.

Chop Brockoly and add for another 5 mins.

Drain liquid off (into bowl! - do not throw away!)
and add final stock cube and make into gravey, add
corn flower if you want to make it thicker.

Serve with mash potatos and eat.

Enjoy.
