I made this last night and thought it was great; good combination of flavours, pretty colours, and really easy. It's hardly even a recipe, more of a few classic flavour combinations, but I couldn't find it on any food web sites or in any of my (limited range of) cookbooks so I thought I'd write it down. Penne with roasted peppers Serves 2 generously 3 red peppers 1 yellow pepper 3 cloves garlic, finely chopped sea salt and pepper olive oil about 2 cups of spinach and/or rocket leaves handful of basil leaves, torn (about 1/2 cup) about 10 kalamata olives, deseeded and halves about 1 tbsp capers, rinsed about 1/4 cup feta, crumbled 300g of pasta Slice up the peppers (I did mine so that they were about 1.5 cm wide and 5 cm long). Put them on a roasting tray and sprinkle over the garlic, salt and pepper. Glug on some olive oil and smoosh em around a bit, and then arrange them so they're cut side up. Bake at 220C (425F) until they're crispy at the edges (about 45 mins - 1 hour). Cook and drain the pasta and put it back in the saucepan. Stir in the spinach so that it wilts (you may need to put the pan on low heat again for a minute) and a glug of olive oil. Stir in all the remaining ingredients (peppers, basil, olives, capers and feta) and season to taste. All done!
