Do you dress the potatoes with vinaigrette whilst they are warm?  I
think it makes all the difference.

When I make the rice salad I shall stir a small quantity of dressing
through the rice while it's hot - absorbs all the gorgeous flavours
whilst it cools. Just not the same if you try to dress once cold.
