So we've had 4 stips of belly pork sittign around for a while which were
gogint o be cooekd in a black bean sauce with basil and red chillies
however i couldnt be arsed with that so i thought i would do them in a bbq
sauce. Since the last tiem i did it following delia's recipe they were
quite tasty. this time i decided to do it my own way since the sauce wasnt
really tasty enough. while doing this i had an epiphany about how to make
a good sticky bbq sauce. anyway to the recipe

Ingredients:-
4 Strips of belly pork
Olive Oil
Salt
Pepper
Dark Brown sugar
Molasses ( this would be the key)
Dark Soy Sauce
Worcestshire sauce
Red Wine Vinegar
Balsamic Vinegar
Jalapeno Tobasco Sauce
Tomato Ketchup

Method:-
Preheat the oven to 200C
Pat dry the strips of belly pork with kitchen towel.
Place in a roasting tin. Apply a little bit of olive oil on one side then
season with quite a bit of salt and pepper. turn over repeat.
place in oven for 30 minutes.
while the pork is in the oven make up the sauce.
I wasnt keping any measurements but it produced about 1/2 pint of sauce.
the only one im sure of was it was 2 large teaspoons of molasses. most of
the volume was also probably red wine vinegar. but sim sure any
combination of the ingredients will work.

Take the pork out. pour over the sauce. all of it but making sure you
cover the pork well.
put it back in the oven for 25-30 minutes basting and turning over every
10 minutes or so.
the mollases and sugar go really sticky. this made it a great sauce in my
opinion. In future however i might line the roasting tin with foil. i
think it might be a bitch to clean up. not that ive looked at that yet.

they were very tasty.
