dice and cook one large tater. drain off all the water and set aside.

heat some oil in a pan, and add half a finely chopped onion, two
handfuls of spinach leaves, a little paprika, basil and ginger. fry
until the onions start to brown. add half a tin of chopped tomatoes, the
juice of a lemon, a teaspoon of sweet chutney or pickle, and the taters.
cook for about five minutes more. serve with sossidges, tea, and led
zeppelin.
