I can't think of any (savoury) soup that can't be improved with a good 
quality, home made chicken stock.

Another soup I quite enjoy making is Minestrone.  The recipe is "a bit 
of whatever you've got around".  For me, it's softened onion, veggies 
(courgette, carrot, whatever else is around), chicken stock, some herbs 
(thyme, rosemary?), pepper, tinned tomatoes and farfalle pasta.

Traditionally it's made at the start of Winter with bits added through 
the season.  So long as the soup is heated to piping hot once a day, 
it's not dangerous to do it this way.
