I find steaming whole aubergine a great way to prepare them that is relativ=
ely quick and, of course, fat and salt free. Once the steamed aubergine is =
cool, you can scoop out the flesh and dress with olive oil and lemon juice,=
 s&p, etc.or use as basis for omelettes, caponata, pasta sauce, what have y=
ou.

To cook, place whole aubergine in sauce pan fitted with steamer rack. Cover=
 and steam until tender when tested with a trussing needle or skewer =E2=80=
=93 I forget the exact time, but probably somewhere around 20 minutes.

I am getting an aubergine in my organic box at the end of the week.  Now au=
bergine is one of my very favourite vegetables - when someone else prepares=
 it!  When I try to do it myself (following various instructions - i.e. sal=
ting it, not salting it but rinsing it, slow cooking it with other veg) it =
always tastes a bit bitter and sometimes a bit tough.
I don't want this to be like my scrambled eggs failure.  Has anyone a fails=
afe way of preparing and cooking an aubergine.  For idiots.  That still tas=
tes nice.  As I'd really like to actually eat it this time instead of stari=
ng sadly at a greyish looking bitter mess in the bottom of the tray.
