a friend cooked tuna for my birthday BBQ, he had sushi grade tuna
that he marinated in mirin[1] (a sweet low alchohol drink) and soy
sauce. after about an hours marination he coated it in lots of crushed
black pepper.

he then cooked it quickly, sealing it all the way around and leaving it
raw on the inside and served it sliced.

it was lovely,
