Hmmm, that sounds like one of those recipes you get on the back of jars 
or in Bella magazine. But it's really nice - especially for brunch or as 
a post-pub snack. It's more like a posh welsh rarebit.

This is for one person but it fills you right up.

Ingredients:
Cheese (2-3 handfuls)
2 medium eggs
2 slices of bread
horseradish

Method:
Beat the eggs and then whip the cheese in. You're looking for a 
consistency which isn't too thick but is thick enough to stop it running 
off the bread.

Season and add three tsp of horseradish straight from the jar.

Toast the bread and the spread the mixture thickly on it - if you go all 
the way to the edges and then a little bit over then you don't get burnt 
edges. 

Then whack it under a medium grill (150-180 degrees celius) for about 
5-10 minutes. The mixture should have souffled and then gone lovely and 
brown on the top.

Eat immediately. I just did and it was lovely.
