They didn't give out very much water when roasted, so I imagine it would
work OK.  Although you might need to scoop the middle seedy bit out?
(we did when roasting them) 

Ratatouille is always good.  I had an excellent ratatouille at a pub
called "The Fox Runs Free" near Chichester on Saturday night.
