I found a great recipe for savoury pancakes with fish in a book, and
I made it last year. Probably time to make it again actually, as it was
so good last time.

Essentially, you could do it by just making fish in a creamy sauce
as would normally form the basis of a fish pie, but wrap it in pancakes
instead, pour cream over, sprinkle with a bit of parmesan and bake.

The recipe I used had a really good sauce, with egg yolks to make it
much much richer than a normal white sauce would be.

I'll try to remember to look up the recipe tonight to see what went
into the sauce.
