Just over a year later, I discover the following recipe in an Abel &
Cole newsletter that I wish to throw out.  Abel & Cole deliver
organic vegetable boxes and I like them a lot - see

Apple Cheddar Bread Pudding

Serves 8.

14 slices of firm white bread
100g / 3.5oz granulated sugar
100g / 3.5oz unsalted butter; softened
1.5 tsp cinnamon
0.5 tsp nutmeg; freshly grated
6 apples
1.5 Tbsp fresh lemon juice
50g / 20z light brown sugar
60ml water
100g / 3.5oz extra-sharp Cheddar; coarsely grated
4 large eggs
600ml milk
pinch of salt

Preheat oven to 180C / 350F / Gas mark 4.

Spread bread slices thinly with butter.  Stir together a third of the
granulated sugar, cinnamon and nutmeg and sprinkle evenly over
buttered sides of bread.  Arrange bread on baking sheets and toast in
middle of oven until golden, about 15 minutes.  Cool toast and quarter
each slice into triangles.

Peel and core apples and cut into thin slices and toss with lemon
juice.  In a large frying pan melt remaining butter with brown sugar
over moderately high heat, stirring, add apples and water.  Cook
mixture, covered, over moderate heat, stir occasionally for 10
minutes.  Remove lid and cook apples until just tender and most liquid
has evaporated.

Butter an oval gratin dish.  Alternate layers of toast, apple mixture
and cheddar, finishing with a layer of toast cinnamon side up.  In a
bowl whisk together eggs, granulated sugar, milk, and salt and pour
slowly and evenly over dish.  Chill pudding, covered, for at least 1
hour and up to 1 day.  Bake pudding in middle of oven for 45 minutes.
