I just vanquished an entire mackerel.  I followed this guide:

The pictures are a bit small though, and my mackerel didn't seem to
have any scales.  Does anyone know of a better pictorial reference?

I think I won in the end.  I got the guts and spine and little bones
out.  I did accidentally squirt a bit of blood on me but not very much.
