Remember to make use of dairy substitutes like soya milk and soya
cream.  You can even get decent soya cream cheese now, though the hard
cheese substitues are not great and probably best avoided (and some of
them have nuts in anyway).

Mashed squash: Cut a hard squash (eg butternut) in half, microwave
till soft enough to mash (up to 10 minutes or even more), peel, mash
with cream (soya cream is fine) and lots of black pepper.  Microwaving
is better than boiling or steaming as it drives more water off.

Ginger carrots: Cut peeled carrots into slivers with veg peeler, grate
fresh ginger, saute together in sunflower oil.

Lentils with dark greens: Boil Puy lentils in a good veg stock (I like
Touch of Taste), drain.  Cook thin half-moons of red onion in olive
oil until softened, add shredded greens a handful at a time, cook it
all for a good long time until liquid gone and caramelisation has
happened.  Kale or dark green cabbage is good, don't use (too much)
spinach as it's not sturdy enough and will go to mush.

Roasted vegetables are good too; you can roast pretty much anything.
Try cauliflower.
