The American TV programme "Good Eats"[1] had an excellent low-tech way
to do Southern-style BBQ.  Take two large untreated terracotta garden
pots.  Sit one right-way-up and thread an adjustable electric hob
through the hold in the bottom.  Place a metal rack inside.  Put
woodchips on top of the hob.  Put meat on the rack.  Turn the hob on
very low heat.  Place the other pot upside-down on top of the first pot.
 Cook eight hours or more.

Of course, the key to BBQ is in the seasoning...

Good Eats is a pretty good programme.  Goes into the science behind much
of food, which is good.  It's a pity the presenter is such a twonk.=20
