From Atul Kochhar, the bloke who had more dishes put through to the final than any other in The Great British Menu 8-12 Jumbo raw prawns 2 tbsp veg oil 1 tbsp sesame seed oil 2 large onion, finely chopped 1/2 tsp salt 2sp chopped garlic 1sp ground turmeric 2 bunches fenugreek leaves, stems removed 1 tbsp dried fenugreek leaves 2 tbsp coriander leaves 1 bunch spring onions, trimmed and sliced GREEN SPICE PASTE 3 green chillis, stems removed 50g coriander leaves and stems 1stp ground tumeric 3 dried red chillis, halved and deseeded 1tsp cumin seeds 1tsp black pepper corns Peel and de-vein thr praws, leaving the tail attached. Rinse and oat dry. Next prepare the green spice paste. Put all the ingredients in a blender or mini-processor and whiz to a fine paste. Spread half f the paste all over the prawns and set aside to marinade for 30 minutes. Heat half of the vegetable and sesame seed oils in a deep saute pan. Add the remaining spice paste and saute gently for 2 minutes. Add the chopped onions and suate till translucent, then add the rest of the ingredients (except the prawn). Heat the remaining oil in a seperate suate pan and fry the marinaded prawns for 1-2 minutes. Add the prawns to the onion mixture and simmer for about 5 minutes until they are cooked. Serve at once.
