I was about to paste the same link. Gordon Ramsay did that squashing and
chilling thing this week on the F word. There's also a video here:

If you can get past Ramsay's intensely irritating voiceover on the video,
I find the video much easier to follow than a text recipe. I think it
helps seeing it done.
