Only trivially more effort than plain carrot sticks, and you can
prepare them further in advance.

Nice bread with cheeses and pickles and crisp apples.

Refried beans:

served as a dip with tortilla chips.

You could also consider doing a soup, stew or chilli that you can cook
the evening before when it's a bit cooler and then just reheat on the night.
