I wonder if you could do vege sausages? Not the leek and caerphilly
cheese type ones though. I suspect the cooking time would be vastly
reduced on those so you'd have to add them in the last 20 or 30 minutes.
Quorn mock chicken breasts might work.
Other wise lots of chunkily cut root vegetables and a reduced cooking
time I suspect.
