ingredients:-

2 aubergines
1 thing of chesire cheese
Salt + Pepper
Pre grated fake parmesan


Method:-

Slice the aubegrines into 0.5cm slices
take 18 of the large slices and griddle them for about 5 minutes Slice the
cheese into slices ( i mananged about 9 slices) quarter three of the slices
of cheese lay 6 slices of aubergine in the bottom of an oven dish lay the 6
full slices of chesire cheese on top. Genrously salt and pepper place 6
slices of aubergine on top of the cheese put 6 quarters of the cheese on top
generously salt and pepper sprinkle with fake parmesan repeat for anohter
layer.

whack it into an oven at 200C for about 20 minutes.

notes:-
the best aubergine slice was the one under the full slice of cheese. it
had obvioulsy soaked up all the fatty goodness from the cheese in an ideal
world i would have had enough cheese to do a slice on each
layer.
