I was going to suggest curry (Madhur Jaffrey does a nice courgette curry
IIRC) but Martin's already done that. Otherwise I confess to having a
weakness for ratatouille.
Alternatively slice them length ways, rub with garlic, salt and olive
oil and then griddle.
