I like to stuff roast chicken with sausagemeat mixed with lots of fresh
parsley. We always used this as stuffing for our Christmas turkey at home,
but I occasionally use it as a special treat in chicken. It works well
as a stuffing for chicken because it's fatty enough to leave the chicken
lovely and juicy afterwards. You'll probably want to roast it on a grid
though as a LOT of fat will come out.
