Other tasty things.

Spinach with nutmeg. This is a very simple thing and a very last minute
thing. Get your *washed* fresh spinach and cook it in a pan and a tiny bit
of butter or oil until it shrinks. Throw in a spoonful of cream and a bit
of grated nutmeg, mix about, and serve.

Mushrooms in white wine sauce.

Saute mushrooms in some olive oil. Throw in lots of garlic, and saute a
tiny bit more. Pour in a very hefty dollop of white wine - cooking for 11
I'd say you'd need a bottle - and let it simmer down for a while so it
reduces *lots*. Just before you're going to serve, throw in some milk or
cream (and if you want it thick, some cornflour-and-milk and 'ware lumps,
although I like this runny best).

Peppers in tomato sauce. This one has the advantage of being vegan. Chop
up lots of peppers and some onion, and anything else that takes your
fancy. Shrooms are good. And halved garlic cloves. Brush them all over
with olive oil and introduce them to a very hot oven or grill for ten or
fifteen minutes. This is the contents.

Meanwhile, take lots of tomatoes, chop them up, and put them in a pan with
a little olive oil and heat until they are squidge. Throw in a hefty
dollop of balsamic vinegar, a little sugar (how much depends on how sweet
the tomatoes are), plenty of basil, some marjoram, a *hint* of rosemary,
and a bay leaf. And some ground coriander seed. A little salt, and lots of
black pepper. You might need some water or stock added. Stir it about.
This is the sauce.

When you're ready to serve, make sure the sauce is hot and throw in the
peppers et al. Heat and stir all about and, mmm, tasty!

You can prep both bits of this waaaay in advance, too. So good for when
you're cooking lots of stuff all at once.
